Baking a vanilla cake is a basic skill a baker should possess. A perfect Classic Vanilla Cake Recipe is all that required. It seems to be easy but a perfect Cake every-time is not that easy.
So here is my version of Classic Vanilla Cake Recipe with oil for you guys. This Vanilla Cake is fluffy and light in texture. Vanilla Cake goes with many things. You can enjoy it with milk, tea, jam, etc. it tastes too good with any.
For this cake, a rectangular mould is used. This Vanilla Cake Recipe is also called a recipe for pound cake.
This recipe contains egg, a Vanilla Cake seems incomplete without it. But for my vegetarian friends, I want to tell you that you make it an Eggless Vanilla Cake Recipe. Just remember guys one egg is equivalent to ¼th cup of plain yogurt. So in this recipe, you can use 1 and ½ cup of plain yogurt instead of 3 eggs.

Vanilla Cake Recipe with oil
First of all take a borosil bowl and start seiving sugar in it.
We add oil and vanilla essence into bowl. Mix well using a whisk.
Now add a egg. We will be adding one egg at a time.
Adding one egg at a time ensures tha more air is incorporated into the batter. This makes our batter fluffy and light perfect for our Vanilla Cake.
We whisk well until the batter gets fluffy like the image on left.
After adding 3 eggs and whisking well the batter gets light and fluffy. Many bubbles can be seen floating at top. The color also gets lighter yellow.
Sieve all purpose white flour, baking powder & baking soda. Now mix the mixture, just to combine.
After folding batter looks like this.
Add milk and mix well but don’t overmix. Just fold enough to get batter bind in using a spatula.
Put the mould [in a closed pan preheated on low flame for 5-7 mins] OR [in the oven preheated at 170°C for about 10mins]. Let it in for 45-50 mins and then de-mould.
- White Flour: 2 cups
- Baking Powder: 1½ tsp
- Baking Soda: 1 tsp
- Sugar(powdered): 1 cup
- Rock Salt/ Pink Salt: 1 pinch (according to your taste)
- Oil: ½ cup
- Eggs: 3 (@room temperature)
- Milk: 500 ml
- Vanilla essence: 1tsp
